I harvested my spinach seeds yesterday . Some of the seeds are still in the garden as they are not yet ready for harvest . Looking at my journal the harvested seeds will be due to be replanted in mid August or about two months from now . They grow all winter even through way below freezing temperatures and getting buried under snow . Actually they have stayed green even around 0 temperatures . I have put them under row covers for the colder temperatures but have discovered there is no need for that as they don't need the extra protection . -- There is a huge difference in different spinach Varieties and have grown some that simply taste bad . The variety that I have settled on for our survival is delicious , way better than that crap in a can . I will go back and see if I can pull up the name of this spinach for you guys . --- I found my saved original spinach seed purchase empty packet , though I now use my own saved seeds with good germination and growing results . It is " Giant Winter Spinach " that I purchased from " Gaea's Blessing " via the internet .
