Never tried the coffee on any meat before, but it sounds interesting!Coffee Rubbed Venison
It has been "rested" in foil after grilling, so it's evenly cooked throughout (on the medium side of medium rare)
Tastes every bit as good as it looks, and then some!
Meat:
Small end of deer backstrap
Marinade:
Hoover Sauce (marinated 3 hours)
Rub:
6 cloves of garlic, minced or 1 rounded tablespoon of prepared minced garlic.
2 tablespoons of ground coffee
2 heaping tablespoons of brown sugar (light or dark)
1 tablespoon of salt
2 teaspoons of black pepper
2 rounded teaspoons of Italian herb mix
Mix with a fork.
Pretty simple:
Cut the small end of a deer backstrap into two equal length pieces.
Marinate in Hoover Sauce for 3 hours (have never tried it without the Hoover Sauce)
Drain
Rub well, leaving a thick paste of rub on the meat
Grill on medium heat to between rare and medium rare on a meat thermometer
Let rest in foil for 5 minutes.
