Storing method for beef jerky?

Hi, I have done a little searching on the forum and really couldn't find an answer. I probably wasn't searching correctly since I am new here. If I were to buy prepackaged beef jerky in bulk, and repackage it into smaller mylar bags with the appropriate oxygen absorber and maybe a desiccant to absorb moisture, would it keep longer and for how long maybe?

Up front, I don't know - just so you don't think I'm any kind of expert, lol.

The big deal is going to be moisture content. We make our own (at least I know what's in it), and run it through the dehydrator. I generally use venison for jerky because of the low fat content (fat makes it get rancid quickly).

The store bought stuff - if anything I'd try re packing and freezing. All I've ever had didn't have too much of a shelf life, especially once opened.

Maybe someone else has a better idea.....
 
I make my own and vacuum seal and then throw it into a bucket. Will it keep 20 years, probably not, but I know it keeps at least a couple.
 
I bought some beef jerky the other day, haven't had it before and thought i'd try it, it was far too spicy and was unedible , I wont be buying that again.
 
Yep, most of the store bought jerky is too spicy for me and leaves a chemical taste in my mouth. Probably the nitrites they use to cure it. Once on a long bike ride, I ate some store bought jerky and it made me nauseous.
 
Kind of ironic here, I thawed out the last of the sliced up venison and had just put it in the dehydrator a couple hours ago. I love jerky in all forms and flavors. I'm fine with storebought, but agree it's good to know what went into yours. I have never seen how long it will last as between me and the kids it never seems to last long. I also tend to keep it in the fridge just to be safe. I don't use a recipie for it usually, but this time used soy, worschtshire, pepper, onion powder, salt, garlic powder, tereyaki and a little smoke flavoring. I should measure and record more as some batches were better than others and it would be nice to get more consistency. Either way, no one has ever complained about free jerky! The house smells so good right now from it drying, drool.....

Hopefully I can sample a piece tonight, but I will turn it down and let it go all night to finish by morning. Damn, it does smell good.
 
I have tons of beef roast in the freezer and some are just yelling out they want to be made into jerky! Yet, it seems that I have no time at this point in life. . .but seeing this I may just have to make time and soon!
