Depends on the oil. Certain forms of coconut oil have an extremely long shelf life. In general, coconut oil, avacado oil, sesame oil and palm oil all last for years with some degradation (but still usable) after a year if stored in a cool dark place. Heat and light will shorten the shelf life of any vegetable oil.
