Anyone familiar with "vacuum cooking?"
My daughter bought some "Shitake Mushroom Crisps" from Costco and I love them. It is kind of like freeze dried, but lightly cooked. The mushrooms retain their shape and not shriveled like dried mushrooms.

Never heard of it. Do you need a special machine?
 
I don't know...that's why I'm asking.
But if you can cook AND "freeze dry" in one step, that would be something worth looking into.

I want to get a freeze dryer but now I’m intrigued
Will have to look more into this
