I had a full day at work and had good intentions of cooking a good dinner but was tired. I had a turkey leg I had vacuum bagged and frozen and decided to just have that for dinner. There is something primal about chowing down on a turkey leg that is really satisfying. No veggies or sides of any kind tonight. I guess the hops in the beer I’m sipping on might count as a vegetable?

I think the beer could count as a grain.
 
Steak, kale, Brussels sprouts, deviled egg potato salad & bread... cheesecake for dessert.

I have a Boston butt slow roasting right now at 300 degrees. When it’s at 180 internally I will pull it out and let it rest for 15 mins. Then I will put it back in at 475 deg for 15 mins to crisp the outside. This is backwards from how I normally cook roasts (usually seared first), but I saw it in a recipe and decided to give it a go. I have a separate dish with roasted potatoes, carrots, onions and celery I just put in the oven. I’m hoping to eat in 45 mins or so. I love the smell in the house right now from it all.
