Well, he called in to get the 3 bigger feeder calves butchered.

Can't get them in until January! They are going to be BIG lol. Oops.

So schedule early, it's worth the risk that they may be a bit small. Here, January is a terrible time to be moving cattle on the roads.

It normally takes a couple months to get in around here and they totally close off taking any animals except deer during deer season. That's just how it goes, but dang January is a long way off. We end up driving about an hour to the place we normally take ours to even though there is one that is a little closer. Has he tried looking around for another processor yet? It may be worth it in the long run.

Stuck between a rock and a hard place unless you do it yourselves, but most including us don't have a place to hang that much meat.

We paln on building one. We have an 8 foot stainless sink and counter, the hoist, and the freezers. Just need a building, might convert an older crib. Floor needs a drain, though.

I bought my weaner pigs in mid June and called the butcher at the same time to schedule a butcher date. I like to butcher the pigs in mid-late November. That's taking a chance with the snow but it's too cold to buy weaner pigs before mid June.

Do you have a local farm kill guy? My guy's about 2 hours south of me but he'll come up here if he can schedule some other farm kills in the area. He did say that he'll never bring his kill trailer up my road again. Too steep and narrow. Guess it scared the crap out of him last year.

We can't do that in Illinois anymore. Either they go live to a licensed processor, or you do it all yourself, but can't sell the meat, without a whole big licensing deal. It bullshit, but that's my understanding from the guys here.

I'll get on Frank about pouring a pad for the butcher house. By spring he'll be itching to get at it, especially if I can get my hunting license ( proof of residency required) and nail a couple deer.
