I am swimming in this right now. Last year I did pretty good but dang, I am over flowing this year. One of my favorite ways to eat it is sauteed but there are multiple ways of frying, stuffing, casseroles, sauteeing.
I melt butter or kard, then add dice onions to throw in to cook. Add in slices party squash and garlic. Squeeze half a lemon on top of you have one handy, if not it's ok. Add in fresh parsley and basil and I like Tonya Creole Seasoning but you can just do salt & pepper. Cook till done stirring on occasion.
