I am the same way Danil54grl, always good to take advantage of sales when you can. If I'd found the veggies that cheap, I would have been back several times and sending my husband through a different line to stock up. One of the stores I shop at is running a special on different condiments and some sausages my husband likes, so I'll be stocking them up.
 
Today I started canning dill pickles, two batches and still more cucumbers. Since I had liquid left over from Bread & Butter earlier this week, I brought that up to a boil and did another canner full. . . still more cucumbers, so I thought I would do some more dill. Easy and quick to throw together and bring to a boil. Four batches of pickles out of the canner cooling on my cupboard so start clean up. Grabbed my four cup measuring cup and wondered 'why do I have water in that?" Then I realized I forgot to add in my vinegar to the last batch of dills. I had already dumped my canner water, so I said screw it! I am doing it the way grandmas did it for years. Poured all the liquid out of the last batch, added in the vinegar and brought to a boil. Put the cucumbers back into the jars, poured the boiling liquid on top, screwed on my lids and inverted them. Once cooled jars were sealed so we will see how long they last. That's what I get for doing too many projects in the kitchen at one time. We are helping a son and wife move tomorrow so I told them that I would provide a mid day. Made deviled eggs, potato salad, fried chicken and a bread pudding for dessert. DIL parents are bringing breakfast so we should have plenty to eat for a hungry crew.

Jobs like moving are always better with food involved! Glad to hear your garden dried out enough finally. I've been eating salads for a while now, but haven't started canning yet. The peas are producing enough to start by next weekend though. At least it was pickles that you forgot something with, there one of the safer things to can anyways. I really like to use zucchini in place of cucumbers too.

Just glad that it is over!! Left at 7 this morning and started the move a little after 8. got home a little after 7 this evening to take care critters and pick a few things from the garden. Happy I didn't have to cook this evening. If hunny is hungry, he can eat some leftovers. Everything else will just have to wait till tomorrow. . . I am tired and need to just veg out for a while now to get cooled off

Just an FYI Brent, you asked about pics of my food storage at one time. Those are metal shelving that we got for free, given away from an auto mechanic owner friend. She no longer needed them in the shop and we gladly took them. They can hold 6 quarts or 12 pints perfectly in one row. They are adjustable and I can put a half pint on top of the quart jars, but I haven't needed too as of yet.
 
I have found that I hate using the regular mouth jars, but beggars cant be choosey
 
Wow. (and you must really like pickles).
Two years ago I made about forty jars of pickels and my wife thought I was nuts. Last year i didn't get enough to can, just had fresh cukes for salads. So, I'm just about through all those pickels now. With mother nature you never know what is going to do well each year, so I save any good years for the lean ones now.
 
Yep. . . we do tend to go thru a lot of relish each year and the pickles can be drained and thrown into a food processor to make a quick relish. Guys love potato salad, egg salad sandwiches and deviled eggs. And I do like to have extra on hand in the just in case scenario
 
I've gotten a few Cukes for salads so far, but am hoping to have enough to can soon! I think I will be able to can some peas in the next day or two, but shelling them is time consuming! I did grill my first zucchini tonight for dinner, and hope to make some of those into pickles as well.
 
well. im finally trying my hand with bread n butter pickles for the first time..the cucumbers n onions are sitting in ice right now..and im glad that i reread about the vinegar..
I have so many cucumbers now that I pulled the plants out this morning. I'm still feeling a little guilty for it but have made enough pickles for two years and still have a pile of fresh cukes. Oh well, the okra needed the extra sunlight from clearing the fence anyways. I just started picking okra, but don't have enough to pickle yet. Maybe 1 full pint so far, but they are working overtime now.
 
Today was 23 half pints of corncob jelly, well really more like a syrup. I had a couple out of date boxes of pectin that I decided needed user, but that is OK. Really good as a sweetener and on pancakes, waffles , etc. Taste almost like honey! Then since my canner was going I did 10 half pints out Thia Dipping sauce. I use it when I need sweet n sour sauce. . . just thicken with cornstarch on the stove. Then did some rearranging in the stockroom. Haven't added today's in yet cause they are still cooling and the rings will get removed tomorrow, then I will store.

Impressive! I know how much work goes into all that!
 
yeah.it's impressive all right..and to top it off.we deffently know of one person,that dont have a jar one to spare.lol
